I got a big egg plant on the other day. I used some for Mapo eggplants on Monday, and I used the rest for simmered eggplants. I thought it was pretty good. But I didn't know that J was not a big fan of eggplants until now. He would eat if it's crispy like eggplant Parmesan. Oh well, the rest of the eggplants are all mine. I am fine with that.

Flounder, Simmered Eggplants, Green Beans: Very simple Japanese meal.
