Monday: Day 3 of Memorial Day Weekend

Monday, May 29
We had a good Memorial weekend. Just J and me tonight are having relax night. Then we are ready for the game. Let's go Pens!!!!

Stuffed Portabella Mushroom, Clams, Cucumber: OMG, this stuffed portabella is one of my best recipe. I could keep eating!

Stuffed Portabella
Ingredient: Portabella Mushroom, Ground Chicken, Shrimp, Ginger, Green Onion, Salt, Soy Sauce, Corn Starch

1. Mix Ground Chicken, Chopped Shrimp, Graded Gigner, Green Onion, Salt, Soy Sauce and Corn Starch well.
2. Remove stem from portabella.
3. Sprinkle corn starch on portabella lightly.
4. Put #1 on the portabella.
5. Grilled on pan each side till chicken gets done.

I had off yesterday and it was off today too. Ohhhh I can't believe that it's off tomorrow again. I love this feeling. Today I invited neighbor for dinner. Happy Sunday!

Yay, a long weekend has started! Nothing special this weekend. All I will do is to spend time with family. This is the best.

I was very tired when I got home. To stay up for the game, I took a power nap before dinner. Still I fell asleep on the during the game. When I woke up, the game was still on. Then Chris Kunitz scored! I still didn't miss the important shot last night!

I went to bed after 1 am last night. I was still tired when I woke up. I had breakfast J made (yay) and went back to bed. I finally got up and change, then my friend messaged me from Japan. It was midnight Japan and just before noon here. So we started drinking again. After 2 hours we finally hang up and I went to a bedroom and took another nap. lol. Yeah, it rarely happened to me, so it's ok. I enjoyed it.

I got show tickets for my friend birthday. The Penguins game started on 8 pm. After the Pens win, the main show just started. It was all for my friend but I enjoyed a lot.

Happy Mother's Day

Happy Mother's Day! I stayed at in-law's last night. We had chicken wings and beer, and watched the game.

Crab Cake, Beans Salad, Steamed Veggies: Chef J made crab cake for mother's day. Yum. After dinner, we watched a movie, Martians and both of us fell asleep on the couch. haha, happy mother's day to me.

I had such a busy day. I was going to stop by at Franklin Inn for happy hour drink but there was no parking spots. Fortunately, I had a few bottle of IPA in the fridge at home. Happy Friday!

Flounder, Egg Omelette, Stir-fried veggies: I got up 5 a.m. to make bento. This is typical bento I think.

Basil with Pork, Spice Level 4: I was going to order Glass Noodle Salad as usual, but wait! That is carbs! So I ordered Basil with Pork. It came with rice but I saved it for next day. I can't wait tomorrow breakfast. Oh yeah, I have no problems to eat Thai food in the morning. ha!

I was going to Yoga in the evening, but I was so exhausted and decided to stay home and relax. I didn't feel like to cook, but I didn't want to eat out or order food. So I cooked anyway. One more day! Can't wait for weekend.

Steamed Pork and Veggies: Put thin sliced pork, carrot and cabbage in the steamer. To cut pork very thin, use half frozen meat. Served with ponzu. Non oil. Healthy and tasty!

Chicken and Fried Egg, Stir-fried Veggies: This is one of my dad's favorite, Tonpei, thin sliced pork and fried egg on the top. I used chicken but it was good. I think this is the first time to make this. I am glad that J liked it too.

I had an evening shift today. Still I got up usual time. It was a chilly morning but beautiful outside. So I took my dogs for a walk to North Park. It was the best way to start new week.

Tamago-Yaki (egg omelette), Zucchini, Chicken, Rice, Miso Soup: Although most of them are leftovers from last night, but I enjoyed my breakfast.

Baked Beans, Zucchini, Green Beans, Green Peas: I realized that the beans have carbs... hahaha, ok my carbs means rice, bread, potatoes or something like that!

It was such a busy week. I went out for dinner with my friend on Tuesday, Pens game on Wednesday, evening shift on Thursday, birthday party on Friday and another birthday party on Saturday. My body was screaming for Japanese food.

My friend's birthday party today! We got together at a hotel room and opened champagne! Then met other people at Roland's. As I am still doing no carbs for dinner, I ordered a bucket of mussels. Haha, it was huge.

I got a txt from my friend on the way home if I was interested in sushi for dinner. Heck Yeah! The Japanese restaurant is her favorite and she had asked me if it is really Japanese. To be honest, I was not excited to much, but it surprised me! I can't wait to go back with J.

Seriously, I have to go on a diet. So my plan is no carbs at night. I know I've done it before, but it is serious this time. I feel my body is heavy. I am going to visit Japan this summer. I have to lose some weight before that!

Yakisoba: I was hungry for Yakisoba for a while. I used half of ramen noodle and add veggies and chicken. I tried to chew many times.

Salami, Cheese, Kosher Dill, Olives: Even on diet, I drink. And Penguins played overtime! At least, I didn't eat the crackers.
